Spring breathes new life into the world around us!
 
Take a deep breath,
Hold for 3 - 5 seconds,
Close your eyes, 
Let your breath out slowly,
Think of something wonderful,
SMILE!
Repeat as often as possible!

I've rediscovered pink grapefruit and navel oranges.
OMG! 
.
How did I ever forget them. 
Ice cold and cut into wedges. 
I've been snacking on them all week.
Remember the thinner the skin, the juicier the fruit. 
That goes for all citrus, but not for people!

CITRUS SALAD
.
1 head Butter Lettuce
Grapefruit, Orange and Blood Orange Wedges
Cucumber peeled and sliced or 4 Persian cucumbers unpeeled
Avocado chunks
Dressing
½ cup Olive Oil
3 Tbls. Lemon or Lime (microwave for 20 seconds for more juice) remove seeds
Kosher Salt and Ground Pepper
