Now that spring has sprung, my local Farmer’s Market has been bristling with fantasticness!

I’m always looking for ways to include more fruits and veggies into my diet and there’s no better time.

 

As luck would have it, my friend, Sharon, turned me onto Friendship Whipped Cottage Cheese, and now I can’t live without it. I spread it on toast, crackers, eat it plain, put it on celery sticks, Bell Pepper sticks. Make snacks with berries, bananas or nuts.

 

I forgot how delicious cottage cheese is and have been making some great salads with it.

 

Here’s my latest favorite recipe. Great for lunch!

 

Big Scoop of Friendship Whipped Cottage Cheese

2 handfuls of mixed salad greens

1 LG. Pickling Cucumber sliced and peeled

1 Beefsteak Tomato sliced, diced or quartered (however you like them)

Handful of fresh Blueberries

 

 

Olive Oil

White Vinegar

Salt and Pepper

 

YUM!
