In my constant quest for healthy, low-cal and sweet snacks, I’m always happy when spring rolls around and all the berries are bursting with beauty, perfect texture, sweetness and those familiar flavors that remind me of my past.

My mom loved sweets. She was a great baker and when strawberries were in season, she would whip up a pound cake, top it with fresh strawberries, mixed with a tin of thawed strawberries in juice, a dollop of whipped cream and yum!

I love carrying on the tradition, but I’m not a great baker. Although I love pound cake I’d rather not have as many calories, so I get an angel food cake. Angel food cake is lower in fat, using only egg whites, the volume of the cake comes from beating the egg whites.

I start by using a beautiful glass or Mason jar to prepare this simple snack or dessert. There are hundreds of variations. Use your imagination and have fun!

Here we go -
You can either use homemade or bakery pound cake, or angel food cake, whipped cream, or I use cool whip. Then just layer!
Put some strawberries on the bottom of your jar -
Add some chunks of cake, then some whipped cream and repeat till full and ENJOY!
p.s. I like to use an egg slicer to slice my strawberries, so EASY!!
p.p.s. You can skip the cake completely and just go for the layered fruit and cool whip for a super low-cal treat.

VARIATIONS –
 .
Add a layer of granola
A layer of Kiwi, you can slice that with the egg slicer too
Different berries, blue, black, raspberries
Pineapple chunks
Top with a mint leaf
Use low-fat vanilla yogurt instead of whipped cream
Add some graham crackers
Rice crispies
A few slices of banana
Orange slices, or Cuties
 .
I could go on and on, but you get the idea!
